The Kimpton Hotel Eventi is quickly becoming my favorite hotel in the city. During my stay for the Easter holiday, I enjoyed a dinner at L'Amico - which is an amazing restaurant. The restaurant is located within the hotel, and it is so wonderful to have a fabulous place to dine right below your room. Executive Chef Laurent Tourondel is a real genius, and I enjoy tasting new items on the menu.
This appetizer basically changed my life. Eggplant Caponata with mozzarella di bufala was something I just figured I would try. I like eggplant but wasn't expecting to be blown away. I was blown away! It was so much that I wondered if I could make this at home. It ended up I was watching an Anthony Bourdain No Reservations Season 1 Episode 6 Sicily and guess what he dined on? Eggplant Caponata! So I looked up the recipe and have made it twice so far. It is so darn good, and I will be posting a recipe with my photos of my own creation on the blog. It is healthy for you, and you can add or remove what you don't like. I am just in love! Stay tuned for my recipe!

My main course was pillows of pasta filled with seafood. This is what NYC dining is all about.
I really liked the fact that the portion was just enough as I couldn't take any with me not having a fridge in the hotel room.

Dessert was pretty mind blowing as well. Chestnut paste on top, to look like a Mont Blanc with some edible gold because, why not.
Almost too pretty to eat
But that never stopped me before! When you break into it, ice cream in the center with the base a pavlova consistency. I was pretty much in heaven at this point.
