Lobster Tails are a most wonderful pastry from Italy and if you have not tried one, this post will make you want to very badly. They are a cousin to the famous italian pastry Sfogliatelle, which means many layers. When you see these in person, you wonder how they make them as they are so fancy!
As you can see up close, all the layers in this pastry. Then you have a fabulous cream inside, not too sweet, that is a french cream similar to a whipped cream. How does it look inside you say? Funny you should ask that question........
We are getting closer to the inside and my title today of dissecting a lobster tail..........
Is this not amazing!! A very good Lobster Tail is filled as above, from end to end and the dough is very crisp, not soggy....should be crunchy........The taste of this pastry is an experience like no other! You must try one as soon as possible!! Here is a video of the Cake Boss making some with a pretty pink cream ......

Ooooh, I LOVE the lobster tails at Ferrara's!!! AMAZING!! Really wish I still lived in NY right now so I could go get one. Ugh.

Oh yes Amy Ferrara's are excellent....these are so amazing I just had to show everyone, god forbid they never had one! It is a must try for sure as they are so yummy!!
