Fresh Tomato Tart

I got a bit creative this weekend and made a tomato tart......I received this wonderful tart/quiche pan from CSN Stores that really needed to be tried again. It has the removeable bottom and made by the Kaiser brand.
I have been seeing Tomato Tart recipes in many magazines including the food network so with all the fresh tomatoes around now, I felt the need to try it.
I can't begin to tell you how good this was! The flavor was amazing.....we put fresh mozzarella cheese mixed with fontina cheese on the bottom.....then carmelized onions with some pieces of bacon.....not a whole lot just a bit for some flavor ........
then layered the tomatoes and on top some fresh parmeson cheese mixed with panko breadcrumbs....then a drizzle of olive oil and in the oven it went. The house smelled amazing! I cannot thank CSN Stores enough for this great item and every baker should have one of these pans in their kitchen.
this is such a great summer recipe or any time really with a nice salad...you are having one tasty dinner!!

Here is the recipe from Food Network's website:

Ingredients

  • 1 store-bought or homemade dough for tart shell
  • 8 to 10 ounces mozzarella cheese, shredded
  • 2 tablespoons chopped fresh basil, plus extra for garnish
  • 4 to 6 plum tomatoes, sliced 1/4-inch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup extra virgin olive oil
  • Basil, chopped for garnish

Directions

Preheat oven: 400 degrees F. Line loose bottom tart pan with dough rolled out 1/8-inch thick. Spread bottom of pastry with shredded cheese and sprinkle with basil. Cover with tomato slices, arranging to cover as evenly as possible. Sprinkle tomatoes with salt and pepper anddrizzle with olive oil. Bake 20 to 30 minutes. Watch carefully. When crust is golden and cheese is bubbly, remove. Garnish with fresh basil. Slice in wedges and serve warm.

Topped with a little fresh Mozzarella and a glass of red wine would be so good.

I shared the recipe with my Mom on the day that you had posted it and she made this recipe last night for my brother's birthday party at my condo. Everyone loved it and wanted to know where the recipe came from and I told them from my favorite blog "NYC, Style & a little Cannoli."
