There were so many great events at the 2010 Chocolate Show, we are still talking about them 3 months later! I was thrilled to be able to attend a demo with Nick Malgeri, who was the former Executive Pastry Chef at Windows on the World ( in the World Trade Center), book author and teacher.

we had a pretty full room of eager bakers ready to learn from one of the best.....
his new book is titled Bake! and he signed copies after in the bookstore
he was making a hazelnut chocolate tart....sea salt was the salt of choice for this tart
he explained how to measure flour properly and how to toast the hazelnuts
he also answered questions from the audience
