Francois Payard at the 2010 Chocolate Show New York City

I was very thrilled to be able to see Francois Payard in person at the 2010 Chocolate Show. He was pretty amazing and he made a Chocolate Yuzu Cream Cheese Layer Cake. Yuzu is a Japanese citrus fruit that has a very fragrant rind and sour flesh and juice. You can use orange, grapefruit, or lemon juice. The recipe was from Chocolate Epiphany, Exceptional Cookies, Cakes, and Confections for Everyone........

Desert chefs are the most disciplined chefs. They are not only chefs, but also artists and chemists. Everything has to be both beautiful and precise. Very lucky of you to see him in person.

I agree with you and he just seemed so nice as well which was great to see. They are artists for sure!! :)
