If there was one booth you should not miss at the 2011 Chocolate Show New York, it is the Payard Bakery as well as candy collection. Francois Payard is the ultimate pastry chef. His creations will just make you smile every time.
His french macarons are some of the best outside of France you will sink your teeth into........
These confections would make a great gift to bring home to family and friends.......or to take home, hide away and enjoy each night with a cup of coffee..........
At least year's show, he did a demonstration and I was so thrilled to watch him bake in person. He seemed like a really genuine guy as well which was wonderful!
The pastries are out-of-this world.........almost too pretty to eat....but you get over that rather quickly

this was the show last year in NYC so only 1 per year....however lots of chocolate shops in nyc and I must report on them for all the readers here or no one will ! love my job!!
