Fritz was born and raised in Denmark and he founded Knipschildt Chocolatier LLC in 1999. He also opened the café Chocopologie in South Norwalk in 2005. His European background, the formal education as a Chef in Denmark along with his training in France and Spain, have blended with his American experiences to influence his chocolates and confections.
I really felt these demonstrations were wonderful...their was quite a crowd for a Saturday afternoon

Serena Palumbo, who was a Food Network Star contestant, introduced the chefs
they used equipment I would not associate with chocolate but......
if it works...so be it...and it seems Oprah likes his chocolates as well

you have to be very careful not to break the sculpture
too pretty to eat? I think I would get over that quickly!!

You can purchase the most expensive truffle, La Madeline au Truffe, at Fritz's website below....La Madeline au Truffe starts with a decadent 70% Valrhona dark chocolate, heavy cream, sugar, truffle oil and vanilla as the base for the rich decadent ganache. A rare French Perigord truffle (a rare mushroom) is then surrounded by this rich decadent ganache; it is enrobed in Valrhona dark chocolate and then rolled in fine cocoa powder. The result is pure extravagance! Lying on a bed of sugar pearls in a silver box tied with a ribbon. Cost is $250.00 for 1.9oz !!
They also have great holiday chocolates as well on the site...be sure to check it out. A chocolate shop in Dubai is also opening very soon. I am sure you will be delighted with the confections.
